I have to admit, I LOVE the sound of the little "pop" when a lid seals. Home pressed cider from home grown apples... doesn't get much better than that!
Lemon Extract
Simply wash & dry lemons. Peel the outer lemon exterior with veggie peeler. Place peels in the glass jar halfway. Then fill jar with vodka. Put the lid on and place it in a cool dark spot. Shake every so often. Lemon extract will be ready in 6 weeks, but I usually let it go 8-12.
Notes:
With the remaining lemons, I then either freeze dry, or can lemon curd. It's amazing lemon extract.
The vodka is the preservative.

Next project. I have leftover lemons insides from making HCQ - boiling in 1 C water. I'll strain it and make lemonade!
So I drained off the lemon pulp and tasted the juice. It was like tasting straight lemon juice! Pucker up! Added sugar to the hot liquid. Stirred until desolved. Added water. Huston - we have Lemonade!! Nothing wasted.
